Cheaze:Red Fox Gratin

Create this delicious Red Fox Chunky Gratin using our famous Red Fox and Parmesan.


(Serves 4)

  • Butter for the ramekins / baking dish
  • Maris pipers or King Edwards 3 cut into 2 cm chunks
  • Garlic clove, chopped
  • Onion (half of one), chopped
  • Olive oil
  • Creme Fraiche 75ml
  • Milk 63ml
  • Red Fox 100g, grated
  • Parmesan 15g, grated


  1. Heat the oven to 140c fan.
  2. Butter ramekins or large baking dish.
  3. Boil the potatoes in salted water until tender and then drain.
  4. Fry the garlic and onion in a little olive oil for 5 minutes until soft.
  5. Mix the creme fraiche and milk together in bowl and then stir into the potatoes along with the onion mix and both cheeses.
  6. Pour into the ramekins or baking dish and cook in the oven for 40 minutes or until golden and bubbling.
  7. Leave to rest for 10 minutes before serving up.

Creamy, chunky and filling.
