We’re always looking for new ways to use cheese, it isn’t always all about cheeseboards and wine (shocking. We know).
That’s why we’re taking Hotos Feta and showing you how you can make some quick, easy and delicious Loaded Sweet Potato Wedges:the perfect crowd-pleasing side to go with your summer BBQ, steak or to enjoy as a general snack!
• 3 medium sweet potatoes OR equivalent in frozen sweet potato fries/wedges
• Drizzle of olive oil
• Salt and pepper (to your taste)
• 1 tbsp smoked paprika
• Hotos Feta (as much as you want!)
• 3 fresh red chillis
• 6 spring onions
• Handful of coriander
- Take the sweet potatoes, wash and scrub the skin a bit, then chop into evenly sized wedges and place in a large bowl.
- Drizzle with olive oil and season with salt, pepper and paprika and then mix well so potato wedges are evenly coated.
- You can do this recipe on the BBQ or in the oven, whichever you prefer. So either fold a piece of foil around potato wedges (so they are a little spaced out, not over lapping) and place onto BBQ shelf, or bake in oven for half an hour until part cooked.
- REMEMBER if you’re using ready made frozen fries or wedges make sure to alter the cooking time to what is specified on the packaging
- Whilst the sweet potatoes are cooking, you can prepare your toppings. We’ve gone for Hotos feta, chopped chillis, spring onions and coriander, but you can pretty much add anything!
- If you want to make this as a meal rather than a side you could add black beans, you could add salsa, or chilli sauce if you want more of a kick, or even another type of cheese.
- Chop some chunky slices of red chilli, spring onions and then roughly chop a bunch of coriander. Once potatoes are part-cooked, either chargrill on the BBQ or on a griddle pan on the hob to finish. Now place your BBQ’d sweet potato wedges into a bowl and load with your toppings!
