Yakitori Oumi & Chicken

Thought you couldn’t put cheese with East Asian style food? Think again!

This Yakitori Chicken and Oumi skewer is a-ma-zing, and perfect for when you want a change from your usual BBQ dishes, but still want something summer-y.

Also, you can substitute the chicken breast for mushrooms if you want to do a veggie version of this dish (the mushrooms tend to suck up the flavour of the sauce so well and taste delicious!). This recipe uses Oumi which is a melt-in-your-mouth grilling cheese and a great alternative to the traditional Cypriot Halloumi.

 

                                                 

 

Ingredients:

• 400g Oumi, cut into 1 inch cubes
• 200g yakitori sauce (make your own if you want, we got ready made sauce!)
• 300g ready to cook egg noodles
• 130g baby sweetcorn, chopped
• 3 spring onions, chopped
• 1 green pepper, cut into 1 inch squares
• 100g mushrooms, sliced
• Handful of bean sprouts
• 3 chicken breasts, cut into 1 inch cubes
• 1 or 2 sliced red chilli peppers

Method

  • If using wooden skewers, soak in water to prevent food sticking when cooked.
  • Thread chicken, Oumi and green pepper onto the skewers
  • Drizzle with yakitori sauce, reserving half for stir frying vegetables
  • Grill skewers on the BBQ or on a griddle pan, then set aside

  • Stir fry sweetcorn and mushrooms in oil for 5 minutes
  • Stir in yakitori sauce and cook for a further 2 minutes
  • Then add the beansprouts and noodles and cook for another 2-3 minutes
  • Serve stir fry in a dish and top with fresh chillis and spring onions and serve with skewer
